To delete all of the pictures on your iPhone using your Mac you can use Preview.
To do so, perform the following steps:
1. Connect your iPhone via the USB cable to your Mac
2. Open Preview
3. Go to File -> Import from iPhone
4. Press Command + A to select all photos
5. Press the delete icon in the lower left hand corner to delete all of the selected photos
